How to Substitute for Eggs in the Feed Zone

A reader wrote in recently having just acquired a brand-new food allergy to eggs. The Feed Zone Cookbook uses eggs quite a bit, so this poses a problem for our now eggless friends. Fortunately, chef Biju knows how to substitute for pretty much anything.

Biju recommends these two egg substitutes:

Ener-g Egg Replacer
Bob’s Red Mill Vegetarian Egg Replacer

Biju says, “Both of these work well for baking and in all the recipes that Ener-g and Bob’s Red Mill recommend. Check out the nutritional values and cooking methods on the packages as they won’t be the same as actual eggs.”

Biju says that for breakfast recipes like Feed Zone pancakes and french toast, you can mash up some ripe bananas, 1 banana = 1 egg. The taste isn’t the same, but the moisture and binding properties are similar.

For savory dishes like Allen Lim’s Chicken Fried Rice, a similar amount of crumbled soft tofu can swap out for eggs.
