Quinoa Salad with Salmon and Grapefruit
The dish is suitable for either lunch or dinner; the grapefruit, although it is a fruit, can be consumed later in the day because it has a low GI. This particular citrus fruit supports the reduction of fat tissue.
1 large grapefruit
3⁄4 cup cooked quinoa
1 cup chopped lettuce
2 teaspoons finely grated grapefruit zest
1 tablespoon olive oil
1 teaspoon honey
Salt and pepper
4 ounces smoked salmon, cut in bite-size pieces
2 tablespoons chopped pecans
Recipe Instructions
- Halve and gently squeeze grapefruit, collecting about a tablespoon of juice; remove grapefruit sections with a knife (retain the membranes).
- Place cooked quinoa on a plate and add lettuce and grapefruit sections.
- In a small bowl, mix grapefruit juice with zest, olive oil, honey, and salt and pepper to make a vinaigrette.
- Add salmon to the salad and pour vinaigrette as desired. Sprinkle with pecans.
